Just in case you didn’t know the 19th-25th September is National Cupcake Week. Cupcake week was started to promote the popularity of cupcakes in order to help bakery businesses boost their sales.
We have tried and tested a few different recipes over the past couple of months. Some are a lot simpler than others, and we’ve gone for a few a bit different (hint hint ones got rum in it). There are some recipes that we are still in the process of testing and changing but we can show some pictures of what’ve done so far to start us off!

Chocolate Cupcakes with a Chocolate Fudge icing
We are working on taking these to next level and having a soft centre that oozes out when you bite into it. It’s currently up for debate whether it should be chocolate in the middle and if so what kind, or whether we should try something else like salted caramel. The salt in the caramel would help level out the overall sweetness of the chocolate, but if you are going to have something seriously chocolatey why not just add more chocolate?
The fudge icing is something we are pretty happy with at the moment in regards to flavour and texture, the only thing we need to work on is how stiff the icing goes when it is cool, we were hoping for a more gooey finish.
We should be able to bring you a recipe we are 100% happy with very soon :).

Chocolate and Peanut Butter Cupcakes
R- First things first, my love for peanut butter is eternal. Peanut Butter goes with anything, you can put it in a milkshake with banana. On pancakes. On pretty much any white bread carbs you can get your hands on. Or just eat it with a spoon, why the hell not?
As you can probably now tell, trying this recipe was definitely something I was looking forward to. We took a very basic cupcake recipe and tried adding peanut butter to the mix and just use a chocolate frosting to top them, but this made the tastes very separate, you got a bit of a peanut taste followed by a big hit of chocolate. We wanted a more mixed taste so both the peanut butter and chocolate flavours were on a similar level.
There were a few more attempts of bringing the peanut butter but the one that worked best was as simple as just putting equal amount of PB and chocolate in the middle. It’s nearly where we want it to be so we will keep you updated.
